I have an endless love for foooooood and recently decided to switch from vegetarian to a vegan diet:) For now, its only a one week challenge! Lets see how it goes:)
Super awesome grilled veggies sandwich
This is really easy!
1. Grill your favourite veggies, such as eggplant, bellpeppers, courgettes, asparagus
2. For the sauce: blend together soja joghurt, salt, pepper and dried tomatos
3. fry a wheaty chorizo
4. now put all on some very nice whole wheat bread and top each layer with joghurt. Bon appetit!
Apple bbq spread
you need 1 apple, 1 onion, 1 garlic clove, 1 tablespoon pine nuts, bbq sauce
1. Cut apple, onion and garlic into small pieces.
2. Then roast the nuts. once they turned goldenbrown, add onions and garlic and wait until are nicely brown.
3. Add the apples. Once they look a little mashy, add as much bbq sauce as you like (for me, 1 tablespoon is enough) and mix it well.
4. let cool for a few minutes and blend it just a little for chunkyness!
